Meet Þórey Birna, 42, a sheep farmer in Jökulsárhlíð near Egilsstaðir. She learned to knit at four while tagging along to her grandmother’s textile classes and, long story short, learned faster than the teenagers! She loves how knitting empties your mind, even on the simplest project. Her favorite place is Borgarfjörður eystri, where she grew up. As a sheep farmer she should probably say lamb, but her favorite since childhood is rice pudding with cinnamon sugar and slátur, Iceland’s take on haggis. She recommends arriving by ferry in Seyðisfjörður and stopping at the small museums in the villages along the way. And no, Icelanders don’t live in igloos!
